Ingredients

  • 2 eggs
  • 4 dates
  • 1 shredded apple
  • 2 tbsp Olivino Cara Cara Orange/Vanilla Balsamic
  • Juice and zest of 1 orange
  • 2 cups shredded carrots
  • 1 cups shredded zucchini
  • 1/2 cup almond milk
  • 1 tbsp coconut sugar
  • 1/3 cup ground flax seed
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp ginger
  • 1/2 tsp nutmeg
  • 2 cups whole wheat flour

  Directions

  1. Put dates and eggs in blender, blend until dates are chopped.
  2. Mix together wet ingredients.
  3. Mix together dry ingredients.
  4. Combine, and place in oiled muffin tin.
  5. Bake at 350 degrees for 25-30 minutes (12-15 minutes for mini muffins)
* For Cranberry Orange Muffins
  1. Add 1 cup dried Craisins
*For Blueberry Orange Muffins
  1. Add 1 cup blueberries and 1/2 cup raisins
