- Put dates and eggs in blender, blend until dates are chopped.
- Mix together wet ingredients.
- Mix together dry ingredients.
- Combine, and place in oiled muffin tin.
- Bake at 350 degrees for 25-30 minutes (12-15 minutes for mini muffins)
* For Cranberry Orange Muffins
- Add 1 cup dried Craisins
*For Blueberry Orange Muffins
- Add 1 cup blueberries and 1/2 cup raisins
