• 1 package baby bella mushrooms cleaned and destalked (mince ¼ cup of cleaned stems) 
  • 1 egg 
  • 1 cup fresh spinach – finely chopped 
  • 1 TBSP Olivino White Truffle Oil
  • ¾ cup feta cheese 
  • 1/4 cup Panko bread crumbs
  • 1 tsp kosher salt 
  • Pepper to taste


  1. Mix minced mushroom stems, egg, spinach, feta, bread crumbs, salt, pepper, and Olivino White Truffle Olive Oil in bowl to combine. 
  2. Stuff mushroom caps with mixture 
  3. Bake at 350 degrees for 25-30 min 
  4. Serve warm
