1. Preheat oven to 375 degrees. In a bowl mix together honey, balsamic vinegar, olive oil and seasoning to taste
  2. In a tray, combine carrots, thyme and 3/4 of glaze, ensuring you coat the carrots as evenly as possible. Roast for 15-20 minutes or until carrots start to caramelize
  3. Take the tray out of the oven, flip carrots and pour on the rest of the glaze. Pop back in the oven until nicely browned and sticky. This can take up to another 20-25 minutes depending on the size of the carrots. Be vigilant and don't turn on heat to try and speed up cooking as the vinegar/honey will burn
  4. Serve by pouring over any leftover glaze from the pan, and a sprinkle of fresh parsley. Drizzle over more balsamic for a nice finishing touch

*Halve the carrots unless they are very small. If you have particularly large carrots then feel free to quarter them, just make sure all carrots are similar in size so they cook evenly.
