Ingredients

Pasta Salad:

  • 1lb box of orzo, cooked
  • 9oz jar of kalamata olives, chopped
  • 14oz can of artichokes, chopped
  • ½ cup of red onion, finely chopped
  • 2 cups of chopped multi colored bell peppers
  • 1 & ½ cups cherry tomatoes, sliced
  • ½ cup cucumbers, chopped
  • 1 (6oz) container of feta cheese
  • Salt and pepper to taste
Dressing:

  Directions

  1. Mix ingredients except feta cheese together in a large bowl. Pour in ¾ of the dressing and toss. Refrigerate overnight and add more dressing as needed.
  2. Finish with feta, salt, and pepper before serving.
  3. Enjoy!
